Renowned author of the 1825 La Physiologie du Goût (The Physiology of Taste), Jean Anthelme Brillat-Savarin was also a lawyer and politician who attended the Estates General as a deputy during the French Revolution. He survived the terror abroad including a three year stretch in the United States giving French and violin lessons. Dufy's etchings are themselves an epicurean delight, a fine choice by the Bibliophiles du Palais whose elegant watermark graces the lower margin with that of BFK Rives.
