SALON At Salon, only in the best years is the wine chosen to be made into a vintage Champagne. On average this happens every three years, so that in over eighty years of history 1983 is only the thirteenth vintage of Salon- Le Mesnil. It is seldom, therefore, that two consecutive years are declared as vintage, such was the case in 1928 and 1929 and more recently the 1982 and 1983. Salon-le Mesnil is the original Blanc de Blancs Champagne, created at the turn of the century by Eugène- Aimé Salon. After many years of making Salon for himself and his friends he produced his first commercial vintage in 1921. A perfectionist, gourmet and wealthy Champenois, Aimé Salon believed that he could make a Champagne of extraordinary elegance and finesse by using only the Chardonnay grape, and only certain Chardonnay grapes from one Grand Cru Village in the Côtes des Blancs: Mesnil-sur-Oger.Champagne Salon today is made exclusively from hand-selected Chardonnay grapes from the same 20 or so vineyards in Le Mesnil-sur-Oger originally chosen by Eugène- Aimé Salon. Salon makes its wine only in the vintage years. Champagne Salon makes no other wine other than this rare vintage, tête de cuvée Blanc de Blancs. First comes the hyper-selection of grapes: Much of Salon's extraordinary style-perfumed nose, exquisite balance, multiple layers of flavor, firm structure, tiny mousse, long finish etc. are determined by the grapes from three distinct micro-regions in this appellation. Salon makes the wine only in the greatest of years, when the grapes develop the ideal combination of rich fruit, sugar and high acidity. Salon uses only the first pressing, gaining the highest acidity and best quality of the grape. Salon never puts its wine through malolactic fermentation.
